|Core the apples carefully starting from the bottom to within 3/4 inch of the top. Take care to leave stems intact.|
|Remove the apple peel.|
|Mix together sugar, cinnamon, raisins and walnuts in a small bowl.|
|Fill the apple centers with some of the sugar-cinnamon mixture and dot with butter.|
|Press the mixture firmly into the apple cavity.|
|Roll pastry dough to a thickness of no more than 1/8 inch. Cut into 8 squares, then cut each square into a triangle. Place apple in center of the triangle.|
|Bring the edges of the pastry together, moisten with water and press to seal.|
|Cut leaf shapes from the dough scraps; use the back side of the knife blade to make leaf veins.|
|Garnish dumpling with leaves as desired by pasting them on with water.|
|Lightly brush each dumpling with egg glaze.|
|Place the dumplings on parchment-lined baking sheet and sprinkle with sugar.|
|Bake for approximately 20-25 minutes, until the pastry is puffed and lightly brown.|
