  • 1 pound Mexican chorizo
  • 1 bottle Mexican beer


  • 1 Start by pricking the chorizo with a fork. Place the chorizo in a non-reactive bowl (glass or plastic) and pour a bottle of Mexican beer over the chorizo. Allow the meat to marinate in a refrigerator for about 24 hours. Drain and discard the beer.
  • 2 Grill the chorizo over moderately high heat, turning until browned all over and cooked through, about 15 minutes.
