This emerald green dressing will heighten the flavor of any salad.

Why try? You might normally think of seasoning a dressing with basil, but here, fresh basil leaves are the base of flavor and color.

This dressing is wonderful with our Grilled Chicken & Fresh Vegetable Salad.

Foodie Byte: You can substitute white wine vinegar or a champagne vinegar if preferred. If you want to brighten up the flavor at all, a teaspoon of fresh lemon juice can be added – taste it, then adjust to your liking.

Ingredients

  • 1 cup (packed) fresh basil (2 packages)
  • 1/3 cup red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 teaspoon sugar
  • 1 teaspoon Dijon
  • 2/3 cup extra virgin olive oil

Preparation

  • 1
Process basil leaves in a food processor until they are evenly minced.
  • 2
Add in the red wine vinegar, salt, pepper, sugar, and Dijon and blend until thoroughly blended. Scrape down the sides of the food processor.
  • 3
With the food processor running, slowly pour in the oil in a thin stream. Serve immediately or store for up to a day.
