To give you some Mexican flair and a taste of his resort, Puerto Vallarta’s Velas Vallarta Resort, Executive Chef Guillermo Carmona is sharing a trio of traditional Mexican cantina parings for your enjoyment.

Chef is sharing recipes for Magret al Mezcal Amores, a duck breast marinated in Mezcal, and topped with fruit, candied carrots, and dried raspberries and figs. Recipe here.

Smoked Marlin “La Tia” features marlin, sautéed in onion, garlic, tomato, cilantro and olive oil, served with his aguachile soy sauce. Get the recipe here.
