Black Walnut Sheet Cake

For an easy way to give your traditional recipe for Sheet Cake an unexpected twist, substitute Black Walnuts. They will add a more robust and out-of-the-ordinary flavor. The rich, earthy flavor is derived from the roots of the tree.

Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 2 sticks margarine
  • 4 tablespoons cocoa
  • 1 cup water
  • 1/2 cup buttermilk
  • 2 eggs
  • ICING FOR SHEET CAKE: 1 stick margarine
  • 6 tablespoons buttermilk
  • 1 cup Black Walnuts
  • 4 tablespoons cocoa
  • 1 pound box powdered sugar

Preparation

  • 1 Sift dry ingredients into bowl.
  • 2 Melt margarine and mix with cocoa and water.
  • 3 Bring to a rapid boil and pour over dry ingredients.
  • 4 Add buttermilk and eggs.
  • 5 Bake in cookie sheet pan with edge at 350ºF for 15 to 20 minutes.
  • 6 ICING FOR SHEET CAKE: Melt margarine, cocoa and buttermilk.
  • 7 Bring to a boil and add powdered sugar and black walnuts.
  • 8 Spread while cake is hot.
