Cock-a-doodle-doo these are amazing burgers and I know you will think so too!  The sun-dried tomatoes and fresh spinach mix in the burgers creates a flavor combination your family will love.  If ground chicken is not available at your market, Turkey works great too; then I add just a bit of fresh chopped sage as well.  Oh by the way, you certainly don’t have to tell your kids about the spinach; when mine were young I referred to it as fresh herbs!

Ingredients

  • 1 pound ground chicken
  • 3 sun-dried tomatoes finely chopped
  • 1 tablespoon Greek yogurt
  • 1 tablespoon fresh rosemary finely chopped
  • 1 cup fresh baby spinach (1/2 for the burgers & 1/2 as condiment)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup bread crumbs
  • 1 tomato cut into 4 slices
  • 4 burger buns of your choice
  • Ingredients for the Mustard Red Onions Sauce:
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • Pinch of pepper
  • 1/2 teaspoon lemon juice
  • 1/2 cup Greek yogurt
  • 1/4 cup grated red onion with the juice

Preparation

  • 1 Method for the burgers:
  • 2 Mix together first 7 ingredients
  • 3 Form into 4 patties and chill for 20 minutes
  • 4 Sauté or grill for 7-8 minutes per side
  • 5 Method for the Sauce:
  • 6 Mix together all ingredients and chill until ready to use
  • 7 Putting it all together:
  • 8 Spread top and bottom of buns with sauce
  • 9 Divide the remaining spinach between the buns
  • 10 Top with the burger, tomato and bun
