Buffalo and cranberry may not be your typical go-to flavor duo, but the Lakota Indians who developed the combination sure were onto something. The ancestral technique of meat preservation served South Dakota’s Pine Ridge Reservation well, and has since evolved into the high-protein, portable Tanka snacks we saw at the National Restaurant Association show this year.
