How Do We Get the Bacon Crisp in Stuffed Jalapenos?

We are trying to make stuffed jalapenos with cream cheese wrapped in bacon. We have the cream cheese stuffed part but how do we get the bacon crisp? We wrapped the jalapenos with the cheese and placed them in the oven but the bacon did not crisp. What did we do wrong? Thank you,

Answer:

It sounds as though your temperature isn’t hot enough. You may want to consider alternate cooking methods – bacon wrapped jalepenos are oven-cooked over the high heat of an outdoor grill. Similarly, you can cook the stuffed and wrapped jalepenos in a large sauté pan over medium-high heat, turning to ensure all sides of the bacon are crispy. Another ‘trick’ is to microwave the bacon for a few minutes before wrapping – this starts the cooking process but still keeps the bacon flexible enough to wrap around the jalepeno.

Finally, if you are set on using an oven, you may want to experiment with using the broiler. Move the oven rack to around six inches from the broiler element. Cook the wrapped jalepenos until the top is crispy, then flip and crisp the other side.
