Ambassador of Chocolate to Retire After RCI Expo


Elaine Gonzalez, author of two books on chocolate, will retire after delivering the keynote address at the Retail Confectioners International Annual National Convention and Industry Exposition this month.

Internationally recognized chocolate instructor Elaine Gonzalez will share anecdotes about her life’s experience with chocolate at RCI’s 90th Annual Convention & Industry Expo, which takes place June 21–25 in Lexington, Ky. The event will draw hundreds of professional chocolatiers to the Hyatt Regency Lexington where they will share secrets to making the world’s most decadent chocolates.

Gonzalez has taught chocolate at The Culinary Institute of America, The Malley School of Merchandising for Retail Confectioners and The Wilton School of Confectionery Art. For almost 20 years she also led tours of Mexico, exploring cacao plantations in Tabasco, observing chocolate traditions in Oaxaca, and studying ancient chocolate rituals in Mayan and Zapotec villages. She captivates audiences with demonstrations of chocolate wizardry.

She is the author of two definitive books on chocolate, Chocolate Artistry: Techniques for Molding, Decorating, and Designing With Chocolate (Contemporary Books, 1983) and The Art of Chocolate: Techniques & Recipes for Simply Spectacular Desserts & Confections (Chronicle Books, 1998), and was a major contributor to the candy chapter of the revised edition of The 1997 Joy of Cooking (Schribner). She has been the recipient of many awards throughout her long career, including induction into the Candy Hall of Fame, the candy industry’s highest honor.

Gonzalez will demonstrate chocolate handling and sculpting at the Cargill Cocoa & Chocolate booth during the RCI Expo & Convention and will be the keynote speaker at the formal dinner following the event. She plans to retire after the convention.
