Speculation has been high as to who would replace Rick Tramonto in the kitchen of Chicago’s famed Tru following his departure.

Chef Anthony Martin, now executive chef/partner at Tru

Well, wonder no more as chef Anthony Martin, who joined Tru in 2008 after working with Joel Robuchon in Las Vegas, is now the executive chef/partner of Tru Restaurant.

Tramonto, who recently left is expected to announce his plans in the next few weeks while founding member, executive pastry chef Gale Gand, will remain a partner at Tru.

‘Anthony has extraordinary talent and creativity, and I have an enormous amount of respect and admiration for what he does. He has been running the Tru kitchen for the last two years, so we know this transition will be seamless,’ says Tramonto.

Richard Melman, the chairman and founder of Lettuce Entertain You Enterprises concurs. ‘Anthony Martin is a major talent. We are fortunate to have him at the helm of Tru continuing to take the restaurant forward. Rick and I will always be close, and I am excited for him and this new passage in his life.’
