This month being the month when many of us decide to be Irish for a day (or a weekend), the choice for Cheesecake of the Month wasn’t too taxing. (Taxing? That’s for next month.) Anyway, this Bailey’s® Irish Cream Cheesecake will be the hit of any dessert occasion. It’s over-the-top delectable, melt-in-your-mouth incredible.

You don’t have to be Irish to appreciate this culinary creation. The sweetened sour cream topping takes you to an altogether heavenly place that may or may not have anything to do with Ireland. Try it, and you’ll be thanking your lucky charms that you did.

I think this may be our best cheesecake ever. I know I probably say that every month, but this one’s going to be hard to beat.
