Not Too Late to Sign Up for CIA Culinary Romance Classes

The Culinary Institute of America presents a Valentine’s Day Weekend of culinary classes for the nonprofessional.

The Culinary Institute of America is offering special Valentine’s Day culinary classes this Saturday, Feb. 12. This is a new program, never offered before. The sessions are described as being perfect for couples — or for singles looking for romance!

They say “food is love,” and the CIA suggests that a class for two would make a wonderful Valentine’s gift.

As a participant of these classes, you will enjoy lunch, and receive a CIA apron and a Masters Collection corkscrew to take home. The classes, conducted at the Hyde Park, N.Y., campus, are limited to participants 21 and older.

Cooking for Romance. The thought of preparing a romantic meal for that special someone doesn’t need to make your heart skip a beat. Instead, combine your passion for food with  recipes from the CIA and you’ll be well on your way to creating a memorable evening. This is a guide to entertaining for two, which will help “students” to discover how to make a sensuous meal in minimal time, freeing one for those all-important little details–setting the table, chilling the wine, and creating the mood. Heart-melting dishes will be demonstrated, such as:

  • Caviar toast points
  • Jumbo shrimp with cognac cocktail sauce
  • Pan-seared filet mignon with sautéed spinach
  • Chive mashed potatoes and truffle oil
  • Chocolate mousse with raspberries

Chili Making to Spice It Up. This class is designed to help heat up your kitchen and warm your soul. Students will learn to prepare a variety of lip-smacking chilis. They’ll join Chef Jim Heywood, Grand Master member of The International Chili Society, in creating a selection of award-winning recipes. In this course, you will learn the intricacies of working with both red and green chiles, as well as techniques for creating rich and flavorful chili. Along the way, you’ll discover Chef Heywood’s secrets for preparing that perfect bowl.

Red chili, green chili, sausage and white bean chili, shrimp and black bean chili, vegetarian red chili, and chili with corn and green chilies are just a few of the recipes featured in this class.

Sorry, but the classes on Sweets for Your Sweetie, Cocktails and Confections, and Cuisine Aphrodisiac are sold out. But the CIA tells us they will be conducting many more Saturday classes during the spring.
