If anyone ever said sophistication is confined to big, big cities, they haven’t hit a college town. The Brown Egg, located near the Missouri State University campus in Springfield, MO, feels like one of the trendy daytime stops you look forward to in Chicago or New York, like Bakin’ and Eggs, for example.
It starts with the welcoming counter clerk, who waves a hello even as you are skimming past the book-laden shelves and the mix of comfortable tables and chairs. She walks you through the menu, which is extensive without being overwhelming, throwing in her personal favorites as well as good advice on what sells well.
It extends through the bottomless cup of coffee, with choices such as a light peaberry all the way to a robust dark roast, or the omnipresent lattes, mochas, and Café Americanos of all such shops.
The food itself is, well, fun—like turtle muffins with a healthy grouping of walnuts and caramel on top of a nice chocolate cake, or a breakfast sandwich offering spinach, tomato, onion, bacon, AND ham. There’s also a daily quiche, breakfast bowls that involve biscuits, pancakes, gravy and other classic ingredients, potato dishes, and more.
It’s a great place for a morning meeting or a group hug among friends; laughter is encouraged.
