Spring has sprung and it’s giving us major warm weather vibes!

We love to break out the barbecue grill and sip on a cold beverage, soaking up the sun. If you’re tired of the average cocktail or ice-cold beer – it’s time to spice it up! Popsicles remind us of youth, but who says we can’t enjoy them as adults?

We’ve noticed a definite trend in spiked popsicles this year, made with a variety of alcohols, some with fresh fruit added. We believe these are the new Jello Shots of the Millennial generation. Not that Jello Shots have lost their cache, but summer weather certainly makes this frozen variety very popular.

Below, find our top three recipes for spiked cocktail popsicles!

Strawberry Margarita Popsicle

Ingredients:

2 cups of sliced strawberries or you can use frozen

1/2 cup sugar

1/2 cup Sprite

1/4 cup tequila

Directions: Cut the strawberries and place in small pan with sugar over low heat until it starts to boil. Use a potato masher to crush the strawberries until they reach a thick consistency. Remove from heat for five minutes then mix in tequila and stir. Last, slowly incorporate sprite as it will create bubbles. Let sit for ten minutes. Place in molds and freeze for four hours, then serve.

Mojito Popsicle

Ingredients:

1/2 bottle ginger beer

1/2 cup fresh squeezed lemon juice

1 1/2 cups Sprite

1/4 teaspoon simple syrup

Fresh mint

Directions: Mull lemon juice and about six mint leaves together in a bowl, then strain. Mix remaining ingredients together. Pour into molds and place one mint leaf in each. Place in the freezer for four hours, then serve.

Chocolate Espresso Liqueur Popsicles

Ingredients:

2 cups of coffee (hot)

1/2 cup coffee cream of your choice

1/4 cup sugar

1/2 cup of Pochteca coffee liqueur

Directions: Mix all ingredients together and pour into the mold of your choice. Place into the freezer for four hours, then serve.
