Peanut Butter Ice Cream Cups Recipe. If you like peanut butter cups, you will love this decadent frozen version. It is quick, easy and doubly delicious, thanks to new BLUE BUNNY Doubles Peanut Butter Ice Cream Bars.

Ingredients

  • Peanut Butter Cup candy mold (2 ounce cup size)
  • Double boiler (optional)
  • 4 BLUE BUNNY® Peanut Butter Doubles™ Bars, slightly softened
  • 4 tablespoons peanut butter
  • 2 ounces bittersweet chocolate
  • Peanuts for garnish

Preparation

  • 1 Using your hands, slide sticks from slightly softened Peanut Butter Doubles Bars. Press slightly softened Peanut Butter Doubles Bars into candy molds and top with peanut butter. Refreeze for 10 minutes.
  • 2 Melt bittersweet chocolate in double boiler or microwave and top cups with chocolate while still in the mold. Top with peanuts. Refreeze.
  • 3 Remove Peanut Butter Doubles Bars from mold and garnish with melted bittersweet chocolate and peanuts. Refreeze.
