Couscous Cakes
Serve with Dandelion, Apple, Fennel and Bacon Salad


  • 3/4 cup couscous
  • 1/2 teaspoon salt
  • 1/4 cup chopped fresh herbs; thyme, oregano, parsley
  • 1/2 can chickpeas drained and rinsed
  • 2 eggs
  • Sprinkle of salt and pepper when making the patties.
  • 3 tablespoons oil for sautéing


  • 1 In a medium bowl with a tight fitting cover combine couscous, salt and 1 cup boiling water.
  • 2 Cover and let sit for 5 minutes then uncover and fluff with a fork.
  • 3 Puree the herbs and chickpeas, salt and pepper until semi smooth.
  • 4 Mix the puree into the couscous along with the beaten eggs.
  • 5 Form into patties and gently place into heated frying pan and cook until crisp and browned; 4-5 minutes.
  • 6 Turn patties over and sauté until browned.
