A refreshing iced tea, made with fresh rhubarb extract for a tangy treat!

Ingredients

  • 4 cups water
  • 4 cups rhubarb, diced
  • 1 lemon, juiced
  • 3/4 cup cane sugar

Preparation

  • 1 In a large heavy saucepan, combine water and rhubarb. Bring to a boil then simmer until tender - about 20 minutes. Strain, pressing hard on rhubarb pieces to extract all the juice.
  • 2 Place in a pitcher then add the juice of one lemon and sugar - more or less - to taste.
  • 3 Chill in refrigerator then serve over ice in tall glasses.
