Ingredients
- 2 tablespoons melted butter
- 3/4 cup jasmine rice
- 1 cup chopped celery
- 1 chopped zucchini
- 1/2 cup peas
- 1/2 cup shredded carrot
- 3 tablespoons fresh herbs; thyme, oregano, rosemary
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 3/4 cups chicken stock
Preparation
- 1 Preheat oven to 375°F.
- 2 Place all ingredients in a baking pan and mix together well.
- 3 Bake for 40-45 minutes.
- 4 Fluff with fork prior to serving.
