Passover, or the holiday of Pesach, is the weeklong major Jewish spring festival celebrating the liberation of the Israelites from slavery in ancient Egypt. The dates each spring are based on the Hebrew calendar, from the 15th day of the month of Nissan through the 22nd day. This year, that translates to sundown April 19 through sundown April 27 on the Gregorian calendar. —Editor

Ingredients
- 2 eggs, well beaten
- 2 tablespoons water
- 2 tablespoons oil
- 1/2 cup Yehuda Matzo Meal
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Preparation
- 1 Mix all ingredients together and refrigerate for half an hour.
- 2 With wet hands, form into balls and drop into boiling soup or salted water.
- 3 Cook for 20 minutes.
