So easy and so delicious. This recipe for Toasted Pita with Za ‘tar is a definite must-try. Serve with a Greek Salad.
Ingredients
- Za 'tar Pita Crisps
- 4 x 80g round pita breads
- 30g Australian butter, melted
- 1 tablespoon za 'tar spices
- HOMMUS:100g tub good-quality hommus dip
- 1/2 cup Australian Greek Style yogurt
- Smokey Paprika Carrot
- 1 carrot, grated
- 1 clove garlic, crushed
- 1/2 teaspoon smokey paprika
- 1/2 cup Australian Greek Style yogurt
- 2 teaspoons finely chopped coriander
- Eggplant and Preserved Lemon
- 1/2 eggplant, cut to 1cm slices
- 1/2 teaspoons finely chopped preserved lemon
- 1/2 cup Australian Greek Style yogurt
- 2 teaspoons finely chopped parsley
Preparation
- 1 FOR ZA 'TAR: Brush pita breads with melted butter and sprinkle with za 'tar. Place on a baking tray and bake at 200°C for 5-10 minutes or until pita is browned on the edges and crisp. Cut into wedges to serve.
- 2 FOR HOMMUS:Combine all ingredients.
- 3 FOR SMOKEY PAPRIKA CARROT:Place carrot, garlic and paprika in a saucepan with 1/4 cup water and boil for 5 minutes or until water has evaporated. Allow to cool and squeeze cooked carrot to remove excess liquid. Combine carrot with yogurt and coriander.
- 4 FOR EGGPLANT AND PRESERVED LEMON:Char-grill eggplant slices until browned and cooked through; roughly chop. Combine with lemon, yogurt and parsley.
- 5 Za'tar is a combination of spices and herbs including dried hussop, sumac, sesame seeds, and salt.
