Mississippi Mud Cake Recipe. This is a rich and delicious dark chocolate cake.

Ingredients

  • 2 sticks butter
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 cup flake cocount
  • sweetened 1 1/2 cups flour
  • 2 tablespoons cocoa
  • 1/2 cup chopped pean pieces
  • TOPPING: 1 jar (7 ounces) marshmallow crème
  • ICING: 1/2 cup cocoa
  • 1 stick butter
  • 1 box powdered sugar (16 ounces)
  • 1 can (14 ounces) condensed milk
  • 1 teaspoon vanilla

Preparation

  • 1 Mix all the wet ingredients together and then gradually add all the dry ingredients.
  • 2 Bake at 350ºF for 35-40 minutes.
  • 3 Remove from the oven and immediately spread marshmallow crème over the hot cake. (Let it set on top and warm a bit, then spread.)
  • 4 Immediately layer on the chocolate icing.
  • 5 You can also bake this in a jellyroll pan. Your baking time will greatly decrease.
  • 6 Stir together before the cake comes out of the oven. Ice while the cake is still warm.
