
A hot cast-iron fry pan cooks broccolini in a flash and gives it a lightly charred flavor. Red pepper flakes add a spicy kick to this dish, which is delicious alongside grilled or roasted meats.

Ingredients
- 4 teaspoons olive oil
- 1 pound broccolini, stems peeled and spears halved lengthwise
- Kosher salt, to taste
- 2 minced garlic cloves
- Pinch of red pepper flakes
Preparation
- 1 In a small cast-iron fry pan over medium-high heat, warm 2 teaspoons of the olive oil until almost smoking. Add half of the broccolini and cook, stirring occasionally, until lightly charred and crisp-tender, 3 to 4 minutes. Season with salt and transfer to a plate.
- 2 Warm the remaining 2 teaspoons olive oil in the pan and cook the remaining broccolini. Season with salt, add the garlic and red pepper flakes and cook, stirring constantly, for 1 minute. Return the first batch of broccolini to the pan and toss to rewarm, about 30 seconds. Serve immediately.
