Sweet Potato Fries with Trio of Dips

Sweet potato fries are even better with sweet accompaniments such as Coconut-Rum Sauce, Honey BBQ Ranch Sauce and a tangy Chipotle Mayonnaise – all perfect for dipping. Serve each sauce in a small dip cup or ramekin alongside these crinkle-cut sweet potato fries for a tasty side dish to any meal.

Ingredients

  • COCONUT-RUM SAUCE:
  • 4 ounces dark rum
  • 10 ounces heavy cream
  • 8 ounces coconut milk
  • 4 tablespoons coconut flakes
  • Kosher salt as needed
  • Black pepper as needed
  • HONEY BBQ-RANCH SAUCE:
  • 1 1/3 cups prepared ranch dressing
  • 2/3 cup prepared barbecue sauce
  • 1/4 cup honey
  • CHIPOTLE MAYONNAISE:
  • 2 cups mayonnaise
  • 2 teaspoons adobo sauce from canned chipotles in adobo
  • 2 tablespoons cilantro, chopped
  • Kosher salt as needed

Preparation

  • 1 FOR COCONUT RUM SAUCE:
  • 2 Add rum to a medium saucepan and place over medium-high heat. Be careful not to ignite the rum.
  • 3 Cook to reduce rum by half.
  • 4 Add cream and coconut milk and bring to a boil.
  • 5 Cook for 4–5 minutes, or until sauce is thick enough to coat
  • 6 the back of a spoon.
  • 7 Add coconut flakes, reserving some for garnish, then taste.
  • 8 Add salt and pepper if needed.
  • 9 Transfer to ramekin and top with remaining coconut flakes. Serve warm.
  • 10 FOR HONEY BBQ-RANCH SAUCE:
  • 11 Combine dressing, barbecue sauce and honey, then store
  • 12 in an airtight container.
  • 13 FOR CHIPOTLE MAYONNAISE:
  • 14 Mix mayonnaise, adobo sauce and chopped cilantro together until well combined.
