Ingredients

  • Tacos Al Pastor
  • 5 ounces marinated pork (recipe follows)
  • 4 6-inch corn tortillas
  • 4 tablespoons onions/cilantro mix (recipe follows)
  • 1 tablespoons chile de arbol salsa (recipe follows)
  • 4 tablespoons pineapple, grilled and diced
  • 1 teaspoon oil
  • Ancho-Guajillo Marinade
  • 2 ancho chiles, toasted
  • 1 guajillo chile, toasted
  • 1 bulla chile, toasted
  • 5 garlic cloves, roasted
  • 1 small onion, sliced
  • 1 teaspoon oil
  • 1/4 cup canned pineapple juice
  • 1 cup fresh pineapple juice
  • 1 cup orange juice
  • 1 teaspoon dried oregano, grounded
  • 1 teaspoon bay leaves, grounded
  • Onion/Cilantro Mix Recipe
  • 1 cup onion, small diced
  • 1/8 cup cilantro, finely chopped
  • 1/4 cup lemon juice
  • 1/8 cup salt
  • Chile De Arbol Salsa
  • 2 chiles de arbol, toasted
  • 5 tomatillo
  • 1 onion
  • 5 garlic cloves, whole
  • Salt to taste
  • Water, as needed

Preparation

  • 1 Tacos Al Pastor:
  • 2 Heat sauté pan with oil and sauté marinated pork, dice and reserve.
  • 3 On hot grill, grill whole pineapple until dark lines are visible.
  • 4 After grilling, dice and reserve.
  • 5 Place pork on tortillas and top with onions/cilantro, salsa, and pineapple.
  • 6 Ancho-Guajillo Marinade:
  • 7 In a sauté pan, heat oil and sauté onions until translucent.
  • 8 Bring all liquids to a boil.
  • 9 In a glass baking dish, place toasted chiles, garlic, and onions.
  • 10 Pour boiling liquid over and spread oregano and bay leaves over chiles and onions.
  • 11 Put another hotel pan or glass baking dish on top and place heavy cans on top so it is weighed down. Preferably, let sit overnight.
  • 12 Blend the marinade and pass it through a strainer.
  • 13 Rub abundantly onto pork and marinate at least 3 hours, preferably overnight before cooking.
  • 14 Onion/Cilantro Mix Recipe:
  • 15 In medium bowl, mix all ingredients, making sure the mixture is overly salted.
  • 16 Chile De Arbol Salsa:
  • 17 Heat grill and grill tomatillos until dark lines are visible and juices start to come out of tomatillos.
  • 18 In a coffee grinder or spice blender, place chiles and grind until a dust consistency is achieved.
  • 19 In food processor, add onion and garlic and puree until a paste starts to form.
  • 20 Then add the chile dust and mix well.
  • 21 Add this mixture to a blender and incorporate the grilled tomatillos.
  • 22 Blend until everything is well mixed.
  • 23 If needed, slowly add water until salsa consistency is achieved.
