A great soup for Christmas Eve–this Tex Mex combination will warm you up and fill you up! It’s perfect for a holiday gathering because you can keep it warm in a crock pot, and make it ahead. Just make plenty because they’ll be coming back for seconds! This recipe provided by Cindy McCracken.
Ingredients
- 1 lb. lean ground beef
- 1 package dry ranch mix
- 1 package dry taco seasoning mix
- 2 cups water
- 3 15 oz. cans diced tomatoes
- 1 can hominy
- 1 can pinto beans
- 1 can navy beans
- 1 can kidney beans
- 1 can Rotel (optional)
Preparation
- 1 Fry ground beef.
- 2 Add the two seasoning packets and water; let simmer.
- 3 Add remainder of ingredients then simply heat and serve.
