90 Second Endive Boats with Fresh Mango Chicken Salad

Think about switching it up with fresh mango! One of my favorites is Endive Boats with Fresh Mango Chicken Salad.

This is an easy twist on your classic chicken salad. Start by making a creamy herb dressing. In a bowl, combine sour cream, mayo, lemon juice, parsley, tarragon, salt and pepper. Mix and set aside.

Now it’s time to cut the mango. Simply slice of the sides of the fruit avoiding the large seed in the middle. Once you have the two sides, cut through the flesh, stopping just short of the skin. Now simply spoon out the slices into a bowl, holding back some for the garnish.

Layer in your chicken, celery, and green onion. Add the sliced mangoes, then pour the salad dressing over the salad mixture and toss well to coat. 

Now it’s time to fill your endive boats, and then garnish with green onions, reserved mango and some toasted nuts. Mmmm!

You’ve added a taste of the tropics just by adding mango!  Now get in the Kitchen!
