Vegan Cauliflower Ricotta Lasagna Rolls

Carolyn Scott, The Healthy Voyager, shows you how to make Cauliflower Ricotta Lasagna Rolls that are totally vegan. There’s no soy-based cheese involved, it’s homemade ricotta cheese made with cauliflower.

The “cheese” is easy to make. You grate and stem a head of cauliflower, add vegan Mozzarella cheese, salt, pepper, oregano, parsley, minced garlic and any other Italian spices you desire. Blend well by hand until it reaches the consistency of a ricotta cheese.

Then you’re ready to stuff vegan lasagna noodles with the homemade cauliflower cheese, spinach, mushrooms, artichokes, and anything else you’d like to include.
