As we join Erica, she has already baked the graham cracker crust in the ramekins, and has let it cool. She has assembled her sorbet (keeping it on ice), and berries.
Fill in the crust with the lime sorbet and smooth out so it is level with the top of the ramekin (about 1/2 cup).
Add a small scoop of black cherry sorbet on top of the lime sorbet in the center.
(You can assemble your mini scoops of sorbet in advance and keep in the freezer until you’re ready to serve.)
Add the additional mini scoops of sorbet all around the black cherry sorbet.
Garnish generously with fresh berries and serve. Your guests will love this refreshing summer treat.
