Core the apples carefully starting from the bottom to within 3/4 inch of the top. Take care to leave stems intact. |

Mix together sugar, cinnamon, raisins and walnuts in a small bowl. |
Fill the apple centers with some of the sugar-cinnamon mixture and dot with butter. | ![]() |

Press the mixture firmly into the apple cavity. |
Roll pastry dough to a thickness of no more than 1/8 inch. Cut into 8 squares, then cut each square into a triangle. Place apple in center of the triangle. | ![]() |

Bring the edges of the pastry together, moisten with water and press to seal. |
Cut leaf shapes from the dough scraps; use the back side of the knife blade to make leaf veins. | ![]() |

Garnish dumpling with leaves as desired by pasting them on with water. |
