Question: I was wondering if you could give me advice on what makes a good electric knife. I carve roasts, turkey, and fillet fish a lot, so this is what i would use it for.

Answer: An accomplished chef will not use an electric knife for the smaller home meals, including the turkey at Thanksgiving. I have, however, used an electric knife when I was slicing beef brisket for 300 people and in large banquet situations. When shopping for an electric knife, look for sturdiness in the blades; there should be two blades. Look for ease of cleaning and a comfortable grip, and look for a longer cord, because often you are not going to be directly next to an electrical socket when carving.
