Christensen spends his days traveling the country in search of new techniques and flavors to bring back to his students at the Frozen Dessert Institute in St. Louis, Mo.
The institute consists of three-day seminars packed with the information and tools to start a frozen dessert business. According to the institute’s Web site, students take courses in frozen custard, gelato, and ice cream techniques. They also learn about management, finance, and how to operate the equipment.
When Christensen is not sharing his knowledge about frozen desserts, he is creating webisodes on his Web site. The latest webisode showed how to make rose petal ice cream for Mother’s Day. In the video, he explained how this gift was much better than candy or flowers.
Past webisodes include his ice cream tours and specialty ice cream recipes. The site also provides the latest news about ice cream and other frozen desserts.
