40 Days Sans Meat: Eating On My Mind

What are you giving up for Lent? Christen Nehmer, videographer for The Food Channel, is giving us her experience in going meatless. Follow along throughout the 40 days of Lent.

Day 22:

Today seemed to drag on forever. Normally, it’s Mondays that drag on, but for some reason it was today. It’s the middle of the week and the weekend is that much closer and I found myself sitting at my desk thinking about what I was going to eat for dinner.

If you haven’t noticed, sushi is my go to meal. It’s healthy, somewhat filling and I really like it. So the boyfriend and I decided to get Ocean Zen to go. They do this lovely happy hour where you can get some basic sushi rolls really cheap. We bought three rolls for $12. Now that’s sushi on a budget.

I’ve also been thinking about what I’m going to eat on Easter. I’m torn between a few things…rotisserie chicken, cashew chicken, ribs or steak. Send in your thoughts on what I should eat!

Breakfast: Oatmeal
Lunch: Leftover grilled salmon
Dinner: SUSHI-spicy tuna, shrimp tempura & Ocean Zen special
