What are you giving up for Lent? Christen Nehmer, videographer for The Food Channel, is giving us her experience in going meatless. Follow along throughout the 40 days of Lent.
Day 26:
There are only three weeks left of Lent. I am counting down the days.
Three weeks is still a long time though, which is good because I need to cook more at home so I can experiment with different proteins. Today for lunch I tried Panera’s new garden veggie soup. I was pretty impressed. It was light, but had lots of flavor. I’ll definitely order that again.
Tonight for dinner, we made homemade mac and cheese. We combined elbow macaroni and bowtie pasta. Basically, that’s all we had left and separately it wasn’t enough so we combined. Melted some velveeta (gross, right?) and voila, mac and cheese. It was way better than any box mac and cheese I’ve ever had. I would prefer to use real cheese next time though.
And for dessert, an Andy’s Thin Mint concrete. Probably one of my favorite things to order there. I’m going grocery shopping today after work so hopefully I can be a little adventurous when it comes to meals for the week. We will see.
Did I mention only three weeks left?
