Our research shows that 1 jumbo egg = 2.5 oz and a large egg = 2 oz.

If you are just using one egg in a recipe, you can use either the large or jumbo size with no noticeable effect. If using two or more eggs, you will want to make the appropriate adjustment – there are a couple of charts at the American Egg Board’s web site that you should find helpful.
