What’s going to be trendy in the coming year in the gourmet foods category? The top five food trends for 2011 shown at the Winter Fancy Food Show, according to the NASFT panel, are:
Chocolate for Breakfast: Tea, Belgian waffles, granola and hot chocolate on a stick.
Foods for Healing: Ancient healing teas, Blackwater with 77 minerals, aloe and cucumber drinks, plus micro-batches of healthful beverages.
New Noodles: Yam, kelp, farro and spelt.
Heat with Flavor: Ghost peppers, yuzu-wasabi sauce and piquillo almond glop.
Creative Chips: Pinto beans, naan, peas, mung beans, kale and wild rice.
Other trends the panel identified are retro foods, classic cocktails, wine-flavored foods, mini servings and cured meats.
The Food Channel’s picks for the year aligned in most areas. “Breakfast is certainly hot,” says Editor Kay Logsdon, “including alternative grains and portability. Tea, coffee and hot chocolate are all getting a lot of attention. And the intensity of the spice has certainly been increased in almost everything.” The Food Channel will be bringing you a full report on breakfast trends, as well as on beverage trends, within early 2011.
The trendspotters for this year included: Cindy Hatcher, Cooking Light; Tanya Henry, Marin Independent Journal; Nancy Hopkins, Better Homes & Gardens; Kara Nielsen, Center for Culinary Development; Amy Sherman, Blackboardeats.com; Margo True, Sunset Magazine; Tina Ujlaki, Food & Wine; and Joanne Weir, PBS television host.
