Ask The Chef
The following question came into The Food Channel:
Question:
How much prime rib should I buy for two people? Thank you.
–Marc
Answer:
The standard amount for a standing rib (bones in) is to figure two people per rib. So, if you have a three rib roast it will feed six; a four rib roast will feed eight. Usually, a two rib roast is about 4 pounds.
Less than that, you can figure about two people per pound (probably with no leftovers). Amounts can be subjective since people’s habits differ. Best advice is to talk to the butcher and get his/her recommendation. Check out the Classic Prime Rib information here for more.
