To make the icing:
Combine 1 cup sifted powdered sugar, 1 egg white, and 1 teaspoon corn syrup in bowl and whisk to blend. Adjust powdered sugar amount to achieve a spreadable but opaque icing.
Color with a gel or water-based food coloring to desired hue and spread icing over cookies.
Let dry and finish with more icing of a different color (we made pink “dots” to go on the white icing). To create your desired design use a pastry bag fitted with a small round tip. These tools can be found at most hobby stores or a baking store where they can be purchased by the piece or as a decorating set. If you are looking for a simple alternative to the professional tools, a small plastic bag can be filled with the icing to pipe a design on the cookies – just fill, close, and snip off the corner to start decorating.
