Ingredients –
Chicken
• 1 ½ lbs chicken thighs or breasts, cut into bite-size pieces
• 2 tbsp cornstarch
• 2 tbsp soy sauce
• 1 tbsp sesame oil
• 1 tbsp rice vinegar (or lime juice)
• 1 tsp garlic powder
• 1 tsp ginger
• Salt & pepper to taste
Honey Garlic Sauce
• ¼ cup honey
• 3 tbsp soy sauce
• 3 cloves garlic, minced
• 1 tbsp rice vinegar (or apple cider vinegar)
• 1 tsp chili crisp or red pepper flakes (optional)
• 1 tsp cornstarch + 2 tsp water (slurry)
Crispy Rice
• 2 cups cooked jasmine or basmati rice (day-old works best)
• 2 tbsp butter or oil
• 1 tsp sesame oil
• Pinch of salt
Toppings (load it up!)
• Sliced cucumbers (fresh or quick-pickled)
• Shredded carrots
• Steamed broccoli or edamame
• Green onions
• Cilantro
• Toasted sesame seeds
• Spicy mayo or sriracha drizzle
• Lime wedges
• Avocado slices
• Chili oil drizzle

🔥 Instructions
1. Marinate the Chicken
In a bowl, toss chicken with soy sauce, sesame oil, rice vinegar, garlic powder, salt, pepper, and cornstarch. Let sit 10–15 minutes.
2. Make the Sauce
Whisk together honey, soy sauce, garlic, vinegar, and chili flakes. Set aside.
3. Cook the Chicken
In a large skillet over medium-high heat, add a drizzle of oil. Cook chicken in batches until golden and slightly crispy (about 3–4 minutes per side).
Pour in the sauce, bring to a simmer, then add your cornstarch slurry. Stir until glossy and thick.
4. Crisp the Rice
In a separate nonstick pan, melt butter and sesame oil. Add rice in an even layer, press down slightly, and let it crisp for 5–7 minutes until golden underneath.
5. Build Your Bowl
Crispy rice → honey garlic chicken → all your toppings → drizzle with spicy mayo or chili oil → sprinkle sesame seeds
