Fresh, hot, and full of blueberries, these muffins from Chef Mike Mech make the perfect breakfast for families in a hurry.

Catechins, a natural phenol and antioxidant, are found in blueberries. These healthy helpers are excellent fat burners and target abdominal fat cells and belly fat in particular.

Ingredients

  • 3 Cups flour
  • 1 Teaspoon salt
  • 4 Teaspoon baking powder
  • 2/3 Cup oil
  • 2 Large eggs room temperature (well beaten)
  • 2/3 Cup milk
  • 2 Cups fresh blueberries well rinsed, and drained
  • 1.5 Cups granulated sugar

Preparation

  • 1 Preheat oven to 400 degrees

  • 4 3-cups flour
  • 5 1- teaspoon salt
  • 6 4- teaspoon baking powder

  • 8 Mix in a separate bowl:
  • 9 2/3 cup oil
  • 10 2- large eggs room temperature (well beaten)
  • 11 2/3 cup milk

  • 13 Add the wet ingredients to the dry ingredients mixing well (will be thick).

  • 15 Add 1.5 cups of sugar, mix until well incorporated.

  • 18 Add 2 Cups fresh Blueberries well rinsed, and drained, fold in gently
  • 19 Using muffin tins that are lined with paper liners, deposit dough ¾ of the way in each opening. And you can sprinkle a bit of additional granulated sugar on the unbaked batter before it goes into the oven if you wish.
