This spring we’re all about veggies!
Glazed carrots are a great side dish to any entree, with the sharp tang of citrus rounded out with the sweet flavor of honey and butter.

- 1 tablespoon butter or margarine
- 4 cups carrots, sliced
- 1/4 cup honey
- 1/2 cup chicken broth
- 1/2 cup orange juice
- 1/2 teaspoon minced orange zest
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 In large skillet over medium-high heat, melt butter. Add carrots and sauté for several minutes.
- 2 Add honey, broth, orange juice and orange zest. Reduce heat to medium-low and simmer until carrots are cooked and liquid is thick. Season with salt and pepper.
