Add a creative twist your St. Patrick’s Day menu this year with these Irish Nachos! Why Irish? Homemade potato chips serve as the base instead of tortilla chips!
Of course, they wouldn’t be complete without onions so we managed to incorporate them in two tasty ways. First, sliced yellow onions are caramelized and braised with Irish cider for bites of rich sweetness to balance the saltiness of the fried potatoes.
Then we finished the dish with a sprinkle of chopped red onion. This adds both a punch of zesty flavor and cheerful spring color.
