This simple side dish or appetizer is so quick to make and packed full of explosive fresh flavor, it embodies the coming of Spring.

- 4 medium onions
- 1/4 cup fresh herbs (such as thyme, oregano, sage and marjoram)
- 1/4 cup butter
- 1 While roasting four medium onions, prepare this simple herb butter sauce. Trim leaves from fresh herbs such as sage, thyme, oregano or marjoram.
- 2 In a small skillet, melt ¼ cup butter. Add about ¼ cup packed fresh herbs. Cook, stirring over medium heat until butter begins to brown and the herbs are crispy. (Be careful not to burn butter or herbs.)
- 3 When onions are soft, remove from oven cut in half and service with herb butter sauce.
