
Cock-a-doodle-doo these are amazing burgers and I know you will think so too! The sun-dried tomatoes and fresh spinach mix in the burgers creates a flavor combination your family will love. If ground chicken is not available at your market, Turkey works great too; then I add just a bit of fresh chopped sage as well. Oh by the way, you certainly don’t have to tell your kids about the spinach; when mine were young I referred to it as fresh herbs!
Ingredients
- 1 pound ground chicken
- 3 sun-dried tomatoes finely chopped
- 1 tablespoon Greek yogurt
- 1 tablespoon fresh rosemary finely chopped
- 1 cup fresh baby spinach (1/2 for the burgers & 1/2 as condiment)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup bread crumbs
- 1 tomato cut into 4 slices
- 4 burger buns of your choice
- Ingredients for the Mustard Red Onions Sauce:
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- Pinch of pepper
- 1/2 teaspoon lemon juice
- 1/2 cup Greek yogurt
- 1/4 cup grated red onion with the juice
Preparation
- 1 Method for the burgers:
- 2 Mix together first 7 ingredients
- 3 Form into 4 patties and chill for 20 minutes
- 4 Sauté or grill for 7-8 minutes per side
- 5 Method for the Sauce:
- 6 Mix together all ingredients and chill until ready to use
- 7 Putting it all together:
- 8 Spread top and bottom of buns with sauce
- 9 Divide the remaining spinach between the buns
- 10 Top with the burger, tomato and bun
