Ingredients

For the Cranberry Negroni

  • 1.5 oz Campari
  • 1.5 oz Sweet Vermouth
  • 1.5 oz Gin
  • Sparkling Cranberry Juice

For the Truffle Popcorn

  • 6 cups popped popcorn (I used purple kernels and pop them on the stove with a couple tablespoons of coconut oil)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sliced scallions
  • Several generous tablespoons of white truffle oil, to taste
  • Salt, to taste

For the Spiced Nuts

  • 4 cups roasted, unsalted nuts
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon cayenne
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion salt
  • Generous pinch kosher salt

Preparation

For the Cranberry Negroni

  • 1 Place a large ice cube in a tumbler. Add the Campari, Sweet Vermouth and Gin and stir with a stirring stick for about a minute.
  • 2 Strain the mixture evenly among two champagne flutes. Top with sparkling cranberry juice.

For the Truffle Popcorn

  • 1 Place the popped popcorn in a very large mixing bowl.
  • 2 Drizzle with truffle oil, sprinkle salt and Parmesan cheese. Toss and taste, add more truffle oil, salt and cheese if you like.
  • 3 Sprinkle with scallions and serve.

For the Spiced Nuts

  • 1 Preheat the oven to 350 degrees. Melt the butter and brown sugar in a bowl.
  • 2 Add the herbs and spices and stir to combine.
  • 3 Toss the nuts in the brown sugar mixture and spread out on a parchment lined baking sheet.
  • 4 Bake for 10-15 minutes or until toasted.
  • 5 Allow to cool completely before breaking apart and placing in a bowl.
