Provided with a sample of an heirloom-bred, free-range ham from Organic Prairie – a farmer-owned operation – I found its old-fashioned flavor and goodness is an excellent choice for those pursuing food choices that are free of GMOs, hybrids and also raised on a natural, vegan diet, which Organic Prairie prides itself on doing.
Their ham is deliciously different and, when further enhanced with a well-made glaze, becomes so outstanding you cannot help but say, “Ah!”
1 heaping tablespoonbrown or Dijon mustard (optional)
Perky Pineapple Brown Sugar Glaze
15 ouncescrushed pineapple in its own juice
1 cupdark brown sugar
1 teaspooncornstarch
1/4 teaspoonground cinnamon
1/4 teaspoonground clove
1/4 teaspooncayenne powder
Gorgeous Guinness Glaze
12 ouncesGuinness beer
1/4 cuppacked brown sugar
1/2 cuphoney
Preparation
For the Marvelous Maple Glaze

In a medium saucepan combine the maple syrup, brown sugar, apple juice, mustard, and ground spice, if using. Place it over medium-high heat and bring to a boil. Boil the mixture for about 2 minutes; being careful not to let it boil over.
For the Perky Pineapple Brown Sugar Glaze

In a small saucepan, combine all ingredients, stirring to blend well. Place it over medium-high heat and bring to a boil then reduce heat to a simmer. Cook until mixture is reduced to almost half, about 10 minutes.
For the Gorgeous Guinness Glaze
