White Chocolate Creme Brulee with Raspberries and Mint

 

White Chocolate Creme Brulee with Raspberries and Mint – Place the creme brulee on salad or dessert plates for a more stunning presentation. Serve with a few extra raspberries alongside on the plates.

Ingredients

  • 2 1/2 cups whipping cream
  • 5 ounces good-quality white chocolate, coarsely chopped
  • 8 large egg yolks
  • 8 tablespoons sugar
  • 1/2 pint fresh raspberries
  • 8 attractive mint sprigs for garnish

Preparation

  • 1 Position rack in center of oven and preheat to 325ºF.
  • 2 Arrange eight 6-ounce ramekins or custard cups in roasting pan.
  • 3 Whisk cream and chocolate in heavy medium saucepan over medium heat until chocolate melts and mixture is smooth, about 5 minutes. Whisk egg yolks and 2 tablespoons sugar in large glass measuring cup to blend. Gradually whisk in warm cream mixture.
  • 4 Divide custard equally among ramekins in roasting pan. Pour enough hot water into pan to come halfway up sides of ramekins. Bake custards until just set but still slightly soft in center, about 35 minutes. Cool in pan to room temperature. Remove custards from pan. Cover and refrigerate until cold, at least 2 hours or overnight.
  • 5 DO-AHEAD TIP: Custards can be prepared 2 days ahead. Keep covered and refrigerated.
  • 6 Sprinkle remaining 6 tablespoons evenly over custards. Using culinary torch, heat sugar until melted and caramelized. Cover and refrigerate at least 1 hour and up to 4 hours.
  • 7 Garnish creme brulees with raspberries and mint, and serve.
  • 8 NOTE: White chocolate is not a true chocolate because it doesn't contain chocolate liquor. Most white chocolate contains sugar, cocoa butter, milk solids, lecithin, and vanilla. If cocoa butter isn't mentioned, the product is known as confectionery coating.
