Who knew you could make a pizza without the dough? Start by caramelizing some onions in a large skillet.
To prep your mushrooms, remove the stems and trim excess around the edges. Brush your mushrooms with olive oil and season with salt and place them on a hot grill, stem side down, until they start to soften.
Remove from the grill and you’re ready to fill.
Use a prepared spinach artichoke dip, usually found in the freezer section, top with the onions, sliced goat cheese, shredded mozzarella and some fresh thyme.
Place the loaded ‘shrooms back on the grill to finish em off–kust about another 5-7 minutes will do it.
