Got friends coming over for lunch? Well, make it special with this fresh Mango Curry Chicken Salad. Watch as Chef Cari with The Food Channel brings it to life. Let’s go! This salad is both colorful and delicious.
To make it, first chop some celery, dice green onion, and then chop some granny smith apples. I choose the Granny Smith just because of the color and the looks, but any apple will do.
Next, in a bowl, combine some mango chutney with mayonnaise. Add curry powder and season to taste with salt and pepper.
Now, in a bigger bowl, combine diced, cooked chicken breast with the green onion, apples and celery.
Pour the mango curry dressing and mix well.
When serving, top with some roasted cashews and you’re ready to go!
This could easily become your signature chicken salad, especially if you’ve got some hungry friends!
