90 Second White Chicken Chili

Start by sautéing some white onion in a large dutch oven. Sprinkle with a little crushed red pepper, cumin, oregano and a good amount of chopped green chiles.

 

Push the mixture to one side of the pot and on the other side put in diced up chicken thighs.  This technique allows the chile mixture to keep cooking; the chicken gets seasoned and you only dirty one pot!

 

When the chicken is no longer pink, mix everything together then add in some drained Cannellini beans, but hold on to some of the juice. Pour in chicken broth and then a little bit of reserved bean juice and then let that simmer for about 20 to 30 minutes.

 

Then simply finish with some heavy cream and fresh chopped cilantro.  That’s all it takes!
