Day 43:

Today we shot Cinco de Mayo and thank goodness that most of the menu was made with fish. So make sure you check back with the Food Channel the week of Cinco de Mayo and you can see everything I got to try!

Oh, so I was at TJ Maxx the other night and bought a vegetarian cookbook. Yes. I did it. A lot of the recipes look really delicious and easy to make and there’s more of a variety beyond salads. My parents and I decided that we are changing our diets and we won’t be eating as much red meat as we have in the past. It’s a big change, but I think it’ll be better for us in the long run.

Breakfast: Oatmeal and banana
Lunch: Veggie Sub from Subway
Dinner: Salad and a cheese quesadilla
